Yogurt is just milk that tiny friendly bacteria turned thick and tangy. These helpers are called cultures, and they are alive. They eat the natural sugar in milk, called lactose, and make lactic acid. That acid makes the milk proteins clump together, so runny milk becomes spoonable yogurt with a gentle sour taste. So the very first ingredient in your parfait is the work of billions of busy microbes, no oven required.
