An avocado is a fruit (yep, it has a giant seed!) packed with healthy fats that help your brain and skin. The creamy part is made of zillions of plant cells. When you mash, you break open those cells and free silky oils and a little fiber—that’s the “buttery” feel without real butter. A ripe avocado is softer and easier to spread; a rock-hard one is still storing starch and needs a few days on the counter, like a banana in slow motion.

Put your ½ avocado in a bowl. Mash with a fork: leave it chunky or go smooth—you’re the chef! Now add lemon or lime juice if you’re using it. The juice is acidic, and that matters: avocado flesh has enzymes that, when air hits, can turn the green a bit grayish-brown (a kind of “banana on the counter, but fast”).
